A warming, yet light soup with vitamin K-rich and fiber-packed ingredients!
Ingredients
½-1 can of chickpeas
1 ½ cup’s worth of chopped cabbage
1 handful of kale, chopped
½ onion, diced
½ red bell pepper, diced
1-2 cloves of garlic, minced
1 cup of cherry tomatoes, cut in half
2 cups of chicken broth
¾ cup of water
1 teaspoon each of cumin, coriander seed, harissa spice, and optional red pepper flakes
Olive oil for drizzling
Salt & Pepper to taste
Preparation
Pour oil into a large pot on medium heat.
Add onion, bell pepper, and garlic to the pot, sauteeing for 2-3 minutes.
Add tomatoes, cabbage, chickpeas, and spices, cooking for another 2 minutes
Pour in both chicken broth and water until covering all other ingredients in the pot, add more water if needed.
Season with salt and pepper and additional spices to taste.
Boil and then bring down to simmer for 15 minutes.
Add the kale and simmer for another 2-3 minutes.
Serve!
