Baked Chile Lime Tofu


Tofu has become one of my favorite foods to cook for about a year now. Since becoming an (aspiring) vegetarian, it's something I gravitate to a lot to get my daily intake of protein and fiber. I can’t eat beans everyday! Usually tofu is primarily used in asian recipes, but this chile lime tofu would be amazing for any cuisine. This easy tofu recipe is definitely one to try if you're looking to mix up your sources of protein! You can watch the video on how easy this recipe is on my Youtube Channel, too!

Serves 1-2

Ingredients

  • 1 package of extra firm tofu, diced into 1 inch cubes

  • 1 clove of garlic, minced

  • 1 lime, halved for squeezing

  • 1 tsp each of ancho chile powder & cumin

  • Olive oil for drizzling

  • Salt & Pepper to taste

Preparation

  1. Preheat the oven to 375 Degrees Fahrenheit.

  2. In a bowl, mix all your ingredients together, stirring gently so as to not crumble the tofu, until well combined.

  3. Add tofu mixture to a foil-lined pan and spread out evenly.

  4. Bake for 20 minutes, until light brown and slightly crisp.

  5. Best served with my oven roasted broccoli recipe!
