A light yet flavorful dish for lunch or dinner.
This is easily my favorite shrimp recipe I have created so far! I actually got the inspiration from a chicken recipe that I tried one day and thought it would be just as delicious with shrimp and a few of my own tweaks. The tomato and feta sauce really add to the heartiness of the shrimp and gives it a mediterranean feel. If shrimp isn't your thing, definitely sub it out with a nice white fish like halibut or cod. RECIPE
Baked Shrimp with Tomato & Feta
Ready in 25 minutes
Serves 2-3 people
can be adjusted per serving
Ingredients
1 bag of peeled and deveined medium sized shrimp
1 can of diced tomatoes
½ chopped onion
½ cup of feta cheese, crumbled
Chopped parsley for garnish
1 tsp thyme
Salt & pepper to taste
Preparation
Preheat oven to 400℉
In a bowl, season the shrimp with salt and pepper.
On medium heat, drizzle olive oil into a saute pan. Add in onion and saute for 2-3 minutes.
Add in the diced tomatoes and simmer for about 4 mins. Turn off the heat and add in the shrimp, thyme, and additional salt and pepper to taste. Stir until combined.
Transfer shrimp mixture to a baking sheet, sprinkle feta cheese crumbles on top, and bake for 10-12 mins, until shrimp are light pink and cooked through.
Garnish with parsley and serve with rice.
