Prepare yourself for this flavorful dish! Now, keep in mind, it is in no way an authentic version of Feijoada, the Brazilian name for this stew, but it is my healthier spin on it! Originally created from leftover bean and meat scraps and hailing from many regions such as Mozambique and Portugal, Feijoada is a warm, hearty and delectable stew, my perfect meal for a cold winter night!
RECIPE
Black Bean Stew (Feijoada)
Ready in 35 minutes
Serves 4, can be adjusted per serving
Ingredients
1 package ground turkey
2 14.5 oz cans of black beans, do not drain
½ chopped onion or 1 whole shallot
2 cloves of chopped garlic
2 cups of chicken broth
1 ½ tsp paprika, cumin, ground annatto or aleppo pepper, and crushed red pepper
Salt & white or black pepper to taste
Preparation
Heat a pot on medium heat and add olive oil.
In a small prep bowl, mix together all spices, including the salt and pepper. Set aside.
Add the ground turkey to the pot and break up into small pieces, cooking for 5-7 minutes until brown.
Add in your onion or shallot and garlic, cooking for an additional 2-3 minutes.
Pour in the black beans, chicken broth and spice mixture and stir together.
Let the stew cook for about 25-30 minutes, stirring occasionally and adjust salt and pepper as needed. If stew is too thick, add more broth.
Serve and enjoy!
