Easy Crepes with Berries & Cream

First of all, I love crepes. Let that be known. They are light and fluffy and super easy to prepare, easier than you think in fact. Blender crepe batter takes literally 2 minutes to whip up and each crepe takes about 1 1/2 to 2 minutes to cook. How could you not love them? This recipe is a classic but I added a little bit of a personal touch to them that adds an extra dash of flavor. I hope you enjoy!
Ready in 30 minutes
Makes 10-12 crepes
Ingredients
1 cup All purpose flour
1 tablespoon sugar
1 ¼ cup of milk
4 Eggs
pinch of cinnamon and nutmeg (optional)
3 tablespoons of unsalted melted butter plus additional butter for cooking
Pinch of salt (to enhance the sweetness!)
½ to 1 cup your choice of berries (I typically use blackberries and strawberries)
½ cup of soft whipped cream
Preparation
Place all ingredients except for berries and whipped cream in a blender and purée until smooth. Refrigerate at least 15 minutes or up to one day.
Set a small sauté pan on medium-high heat and spread a small amount of the additional butter around the pan.
Add a ladle full of batter to the pan, swirling the pan to even it out. Cook for 1 - 1 ½ minutes or until the edges begin to lift from the pan. Using a spatula, carefully lift one edge and use your fingertips to flip the crepe. Cook on this side for about 30 seconds or until just golden. Set crepe on a plate and place a paper towel on top.
Repeat this process with the remaining batter, layering the crepes with paper towels when each one is finished.
Spread the whipped cream on each crepe and fold or layer crepes on top to make a crepe cake and top with berries.
