Mini Veggie Egg Loaves

for a quick, simple and delicious breakfast.



This is a sign that you should start making breakfast loaves. These are so delicious and light, yet filling! This was originally supposed to be a frittata but I forgot I had these little loaf pans and wanted to use them. I'm so excited to share this recipe and I hope you enjoy!


 

RECIPE

Mini Veggie Egg Loaves Ready in 20 minutes Serves 2, can be adjusted per serving Ingredients

  • 5 medium sized eggs

  • 1 cup chopped fresh tomatoes

  • ½ chopped onion

  • ¼ cup chopped parsley

  • 1 tsp paprika

  • Salt & pepper to taste

Preparation

  1. Preheat oven to 375℉ and grease your loaf pans with cooking spray or butter.

  2. In a bowl, mix all ingredients together until just combined and eggs are scrambled (over mixing can make the loaves too dense).

  3. Add mixture into loaf pans and place in the oven, cooking between 10-20 mins or until puffed and golden around the edges.

  4. Serve with your favorite breakfast sides and enjoy!
