Ever wanted to have rice with your meal but didn’t want just plain rice? Say no more! My rice with fried shallots recipe will possible change your life. Honestly, this dish is one of my favorites I‘ve ever created. It’s light, flavorful and even healthy! This is a great way to mix up a weeknight dinner. Serve it as a main dish or a side!
Ready in 30 minutes
Serves 1-2
Ingredients
1 cup Basmati Rice
2 cups of water
1 Shallot, sliced length-wise
¼ cup of light oil (avocado or Canola)
2 Green Onions, sliced on the bias
½ teaspoon each of cumin, paprika, and ground coriander (mix together)
Salt and pepper to taste
Preparation
Place rice in a bowl and cover with water (not the 2 cups). With your hands, slightly stir the rice to release the starch then pour out the water. Repeat until the water runs clear.
Boil 2 cups of water and a pinch of salt in a medium saucepan.
Add rice and ½ of your spice mixture, lower heat to low and simmer 15-20 minutes.
Drain the rice, and set aside.
In the same pan and on medium heat, add the oil and remaining spices. Let this cook for about 30 seconds until fragrant.
Add the shallots and green onions and cook for 4-5 minutes, until golden brown. Remove from heat and stir in the rice gently until combined, adding salt and pepper to taste.
(Optional) top with additional green onion and serve!
