Ingredients
1-2 fillets of Cod
1 Onion
1 Bell pepper
1 Head of Broccoli
3 small to medium-sized potatoes
1-2 cloves of garlic
1 teaspoon each of Thyme, Rosemary, Paprika, and Red Pepper Flake
Olive oil for drizzling
Salt & Pepper to taste
Preparation
Preheat oven to 400 degrees Fahrenheit, and line sheet tray with parchment paper.
Roughly chop all the vegetables and garlic and place them in a bowl.
Drizzle with olive oil and season with salt, pepper, and spices to taste, mixing everything together.
Wash and pat dry cod and add salt, pepper, and spices to taste, rubbing the seasonings in well.
Place vegetables on a tray, making a well in the middle, and place the fish in the center, drizzling the fish with a dash of olive oil.
Bake for 12-15 minutes until the fish is firm but flaky, and the vegetables are tender.
