Simple Sautéed Kale

Lately, i’ve been loving the natural taste of vegetables with minimal seasoning. This kale recipe is perfect for those who want to get more greens in but don’t want to sacrifice flavor. It has some acidity, some warmth and you still taste the distinct, delicious flavor kale has to offer. I hope you enjoy this as much as i do!

Ready in 25 minutes

Serves 3-4

Ingredients

  • 1 bunch of Kale, chopped into medium sized leafy pieces

  • 2 cloves of garlic, roughly chopped (1 clove, finely chopped if you aren’t a huge garlic fan)

  • 1 ½ teaspoon each of paprika, thyme, and cumin.

  • Salt and pepper to taste

  • Optional: ½ lemon (save for the end)

Preparation

  1. Wash and drain kale pieces and place in a large stock pot or large saucepan.

  2. Drizzle olive oil in the pot and set heat to medium, allowing the kale to shrink down a little while stirring occasionally.

  3. Once kale has shrunk down some, add in garlic, herbs, spices and salt and pepper to taste.

  4. Add about ⅓ cup of water to the pan to create a steaming effect and let kale cook for 12-15 minutes, until kale is bright green color and is wilted slightly but not completely, stirring every few minutes.

  5. Right before serving, squeeze a little lemon juice into the pot to add some bright acidity.
