Turkey and Kale Stir Fry

I love a good stir fry, but I don't always want to use chicken or tofu or even just vegetables. That’s how I came up with this recipe. Ground turkey is a great alternative for more commonly used meats but still is fulfilling. I paired this simple, nourishing recipe with some bok choy and kale to add some greenery while providing some much needed vitamins and variety. Enjoy this dish with rice or ramen!

Serves 2-3 Purposeful Portions*

* Purposeful Portions consist of ¼ portion of protein source, compared to ½ portion of fruit and vegetable sources and ¼ portion of carb or grain sources.

Ingredients

  • 1 package of ground turkey

  • ¾ cup of lacinato or regular kale (it will shrink down!)

  • 2 pieces of bok choy, diced into ½ inch pieces

  • ¼ cup of diced red bell pepper

  • ¼ cup of diced red onion

  • 2 TBSP soy sauce

  • 1 tsp of miso paste

  • 1 TBSP sesame oil

  • Crushed red chili flakes to taste

  • Salt and pepper to taste

Preparation

  1. Heat sesame oil on medium heat in a large saute pan.

  2. Add the ground turkey, breaking it up with your stirring utensil, and cook for 5 minutes, or until brown.

  3. Meanwhile, mix the miso paste and soy sauce in a small bowl.

  4. Quickly add in the onion and bell pepper and saute for 2 minutes.

  5. Add in the bok choy and kale and cook for another 3 minutes, then stir in the miso and soy sauce.

  6. Taste your stir fry and season as needed with salt and pepper, for a little spice, add red chili flakes to your liking.
