So let's talk about sun-dried tomatoes. I love them and all, but the classic way (using the actual sun) takes waaay too much work! So i'm sharing this delicious sundried (but actually oven-dried) tomato recipe with you today simply to save you time. You are most welcome. but these aren't ordinary sundried tomatoes! Oh no, these are Tuscan-Style! This means that i've used a flavorful Tuscan spice blend that will spice up these tomatoes. You can make a rough one yourself, but I recommend purchasing one, they are just as flavorful. I purchased mine from the Spice & Tea Exchange (check out their website or visit one of their stores for tons of awesome spices from all over the world). RECIPE
Tuscan-Style “Sun-dried” Tomatoes
Ready in 1 hour 35 minutes
Ingredients
1 Package of Cherry Tomatoes, Halved Lengthwise
1 TBSP Olive oil (extra virgin or light)
1 ½ TBSP of Tuscan Spice Blend
Salt & Pepper, to taste
Preparation
Preheat oven to 375 degrees
In a bowl, combine the halved cherry tomatoes, olive oil, Tuscan spice blend and S&P, then stir until well coated and combined
Spread the tomatoes out evenly on a lined baking sheet, drizzling more oil if needed (tomatoes should be moderately oiled)
Place in the oven and cook for 1-1 ½ hours
Remove from the pan and store in a small airtight container or add to any dish that calls for tomatoes for added flavor!
