This was actually my first time making succotash, a Native American recipe, and I loved it! It's great as a fresh side dish, or acts as a nice warm salad for lunch. Enjoy this recipe in honor of Native American Heritage Month!
Ready in 10-12 minutes
Serves 3-4 Purposeful Portions*
*Purposeful Portions consists of ¼ portion of protein source, compared to ½ portion of fruit and vegetable sources and ¼ portion of carb or grain sources.
Ingredients
1 cup white corn, frozen or fresh
½ cup of lima bean (if you can’t find any, frozen edamame works great, too!)
¼ cup each red onion and bell pepper, small diced
1 TBSP diced jalapeno, or as much as you want
1 heavy pinch each of Coriander and Rosemary
Salt & Pepper to taste
Olive oil for drizzling
Preparation
Heat oil in pan and add onion and bell pepper, sautéing for 2-3 minutes.
Add in the spices, jalapeno, corn and beans and cook for 4-5 more minutes.
Add salt and pepper, taste and adjust seasoning if needed.
